Dining is as much an adventure on St. Barts as watersports or hiking. An activity that's the deciding factor for many vacationers, the fine dining found here often features French cuisine, so much so that the island has earned a reputation as the “French cuisine capital of the Caribbean.” Expect evening meals to set you back at least $50 per person in most cases and sometimes much more.

Sightseeing
Day-trippers enter the harbor town of Gustavia at the waterfront, within easywalking distance of its fine shops and sidewalk cafes. Filled with delicious French atmosphere, this small town can sometimes be bustling, with streams of traffic. The town is built on a U-shape, following the harbor. On one side lies the tourist office, duty-free shops and several cafes; on the other side you’ll find many good restaurants and the Musee de St. Barthelemy.

On Horseback
Ranch des Flamands offers horseback rides on trails throughout the island. The stables contain 15 horses and activities are available on the ranch as well, including jumping in the arena and horse ball. Beginners are welcome as well. For information, 590-27-80-72.

Scuba Diving
Scuba divers find plenty of good sites around the island, including Pain de Sucre, an islet off the Gustavia harbor. Trips cost about 250 FF ($42) per person, including gear. Dive operators include Marine Service, Gustavia (590-27-70-34), offering night dives; St. Barth Plongee, also in Gustavia (590-27-54-44), a PADI operation; and Rainbow Dive Boat (590-27-91-79), which has a 33-foot boat with US gear, near Wall House in Gustavia.

Beachcombing
Shell Beach in Gustavia is great to collect shells and collect other seaside treats. True to its name, the beach is covered with small shells, each almost identical in shape and size. Pretty cliffs.
